Households across Jodhpur, Bikaner, Nagaur and Barmer eat bajra roti daily, and bajra atta goes rancid fast, so people buy it freshly ground in small quantities. That is a steady, repeat business for a shop with its own chakki.
Bajra is also the grain that gives emery stone the most trouble. It carries more oil than wheat, so it smears the stone surface and the grooves fill up. On an emery stone that means cutting the stone far more often than the weekly taki you already expected. Diamond stone does not depend on cut grooves the same way, so the oil does not shut you down. Customers who grind a lot of bajra are the ones who notice the difference fastest.
Beyond bajra you will be grinding wheat, makka, jowar and chana for besan. Many Rajasthan shops also grind spices in small lots, though we always suggest keeping a separate small machine for chilli if you do it in volume, because the smell carries into atta.

Custom grinding for a village usually means short bursts of heavy load. The 14 inch at 35 to 40 kg per hour on 3 HP handles that well and still runs on single phase. The 12 inch is enough only if you are grinding for under 150 kg a day.
A correctly set diamond stone runs cooler than a high speed pulveriser, which matters for bajra because heat speeds up the rancidity you are trying to avoid. Do not force the feed and the flour will come out warm, not hot.
