Assam is a rice state first, and most of our enquiries from Guwahati, Silchar, Dibrugarh, Jorhat and Tezpur involve dry rice flour along with wheat that is bought rather than grown. Pitha and other rice preparations are made from freshly ground flour, and a shop that grinds it in front of the customer has a real advantage over packet powder.
The practical challenge in Assam is humidity. Grain and flour both pick up moisture here faster than anywhere else we ship to, and damp grain will clog any stone chakki regardless of who made it. Dry your grain properly before grinding, keep the machine and hopper clean at the end of the day, and store flour in a sealed container. None of this is specific to our machine, but it is the difference between a chakki that runs well in Assam and one that frustrates you.
