The competition here is not other chakkis, it is the supermarket shelf. What beats packet atta is the customer watching their own wheat go in. That is also why mixed atta made to order sells well in these societies: wheat with chana, soya, jau or ragi in whatever ratio the customer wants, which no packet brand offers.
On sizing, almost every shop in this belt is on a single phase commercial connection in a small unit. That puts the ceiling at the 14 inch, which is fine, because 35 to 40 kg per hour comfortably serves a society market. Take the 12 inch only if you are adding grinding as a side line to an existing grocery counter.
A practical note on premises. Many shops here are in society commercial units with residential floors above. Check your agreement for a noise clause before committing.
