Rice flour, millets and what a chakki can and cannot do

The first thing worth saying plainly to Tamil Nadu buyers is what this machine is not. An atta chakki is a dry grinder. It will not make idli or dosa batter. That needs a wet grinder, which is a completely different machine. We would rather tell you that before you order than after.

What a diamond stone chakki does very well in Tamil Nadu is dry rice flour, ragi, and the millets that have come back into everyday cooking here: kambu, thinai, varagu and samai. Arisi maavu, kozhukattai maavu and puttu podi are all dry-ground, and shops in Chennai, Coimbatore, Madurai, Salem and Tiruchirappalli that grind these fresh have a genuine advantage over packet powder.

Millets are small and hard, which is the load that separates a good stone from a cheap one. On emery you would be cutting the stone constantly. Diamond stone holds its grinding surface through mixed millet and rice work, and because it runs at low RPM the flour does not scorch, which matters a great deal for rice flour.

Yes. Small hard millets are exactly where a diamond stone outlasts an emery stone. Feed steadily rather than filling the hopper and forcing it.

Will rice flour come out fine and white?

Yes, if the rice is properly dried first and you set the clearance fine. Grinding damp rice will clog any stone. The low RPM of a stone chakki keeps the flour cool, which keeps rice flour from taking on a cooked smell.
