It is an industrial machine and it is bought by flour mills, institutional kitchens, and operations supplying multiple retail outlets. It is not a shop machine and we will talk you out of it if that is what you are.
At this size the machine is rarely the constraint. Your constraints are your three phase supply, your floor, and your grain handling. A 10 HP motor needs a properly sanctioned industrial connection. The machine needs a level concrete foundation, not a shop floor. And moving 120 kg an hour in and out means you need someone feeding and bagging continuously or the capacity is wasted.
Where it makes sense, it makes strong sense. One 18 inch is cheaper to run and easier to supervise than two 16 inch machines producing the same output, and it holds a consistent grind across a long run, which matters if you are supplying other businesses that expect the same flour every week.
As with every size, it is supplied without a motor. You need 10 HP three phase, and at this rating you should have an electrician size the cable and starter properly rather than improvising.

No. For a retail shop the 14 inch or 16 inch is correct. The 18 inch is for mills, institutional kitchens and multi-outlet supply operations.
